- 1 tbsp olive oil
- 1 red onion(finely sliced)
- 2 garlic cloves(thinly sliced)
- 1 tsp sweet smoked paprika
- 0.5 tsp dried oregano
- 800 g chopped cherry tomatoes, tinned(2 x 400g tins)
- 150 ml fish stock or water
- 200 g fresh spinach
- 4 fillets skinless cod fillets(approx. 150g each)
- 0.5 lemon zest(zest of ½ lemon)
