    This high protein, perfectly prepable meatballs recipe is super adaptable, swap chicken for beef or pork, and if you don’t want couscous, just use rice, pasta or chickpeas. Family-friendly too, just adjust the spices. Leftovers hold for 3+ days.

    • 500 g Chicken mince(5% fat)
    • 1 Courgette(coarsely grated and squeezed dry)
    • 1 Dried apricots(small handful, finely diced)
    • 1 tbsp Breadcrumbs(2 heaped tbsp)

    • 1 tsp Garlic granules
    • 1 tsp Ras el hanout(for meatballs)
    • 1 Lemon zest(zest of 1 lemon)
    • 2 tins Chopped tomatoes
    • 2 Red peppers(finely sliced)
    • 1 Red onion(large, finely sliced)
    • 1 tbsp Tomato purée(1 heaped tbsp)
    • 2 tsp Ras el hanout(for sauce)
    • 1 Chicken stock cube
    • 200 g Giant couscous(dry weight)
    • 1 Lemon juice(to taste)
    • 1 Chopped parsley(to taste)
    • 4 tbsp Yoghurt(heaped; 1 tbsp per portion)
    • 80 g Feta(20g per portion)
    • 1 Lemon(to serve, cut in wedges)
    • 1 Salt and pepper(to taste)
    • 1 Oil(for frying)
